Summer meals---Ideas Anyone??

Ever since summer started I've been at a loss for meals during the day. Normally of course, the kids eat at school. I don't know why I'm having trouble coming up with creative meals?! Maybe it's the heat!!
Anyway if you have any ideas for some yummy (and NUTRITIOUS!!) and economical summer breakfasts and lunches, please leave your ideas for me!! The kids will eat almost anything too, so that makes it easier. One thing that seems to happen is that we eat junk we wouldn't normally eat... so this isn't a healthy way to be doing things!
We try not to eat a lot of dairy...but some is okay.

It's been really hot here this past week. Today it's up to about 34*C--that's about 93 or 94*F -for my Americans blogging buddies that are reading this. By Friday we're supposed to be up to 40*C or 104*F!!


Thank goodness for the pool! I hope you're all having a great week. I'll be looking forward to hearing from you all with some good ideas!!!

Sometimes I make an entire pack of 72 frozen dinner rolls(Rhoads) and then use wax paper and freeze them. The kids make their own and then we label the freezer bags with their names. I can put 3 mini pizzas per bag(using the wax paper between the pizzas)

Then the kids can heat up the pizza snack whenever they get hungry.

Truly you can cater this to your needs(reduce the amount of cheese, and add whatever)

We eat a lot of sandwiches and cold foods when hot. I don't have air conditioning so our house is 86 degrees inside! I don't even want to think about using the oven...
Fruit salads are good just cut up a bunch of different fruits that you like and mix together its yummy and the fruit is refreshing and good for you.

I'm very jealous of the pool.....

THanks Terri...my kids don't really care for sandwiches unless they're grilled cheese...but we wanna avoid turning that stove ON! But the fruit salad is a great idea...I think I'll go get fruit today.

We eat lots of fresh fruits and veggies.
We also eat sandwiches and salads.
I made canned chicken sandwiches the other day. They were so yummy. I'm always looking for something new too.

We do lots of kabobs on our grill with chicken and veggies. I made a chicken salad the other day with sea shell noodles. My kids always loved that because they could help themselves for lunch or a snack.

If they don't like sandwiches, I make tuna salad, just like I'd put in a sandwich then serve with Cheezits (or other small crackers) mixed in or on crackers. Thanks for visiting my place! You have a nice place here. This 3 kids 3 and under is a blast huh?? (does it ever settle down???) :-) But we seem to live on Macaroni and Cheese here lately. See you soon

My kids get tired of sandwiches, too, but they love anything rolled up on a wheat tortilla... peanut butter, cheese, lunch meat, whatever. Sometimes I will make up tuna, cut up cheese, and put out the peanut butter and jelly, and give them a bunch of whole wheat saltines to top any way they want. You could also bake up a bunch of healthy muffins early one morning, and then wrap them & freeze them to use throughout the week-- whenever I have to use my oven in the summer, I always put as much into it at one time as I can!! Oh, same thing with pasta, I will cook up a ton of it at once, and keep it in my fridge. Then we'll invent different types of pasta salad throughout the week, with different vegetables, dressings, and leftover meats.

I see you a rubbing it in of the hot weather - am I so so jealous -

All we get at the moment is a glimpse of the sun - still it is cool enough to enjoy outdoor walks.

You have been busy revamping the blog - I see and a good job it is too!!

Hi heather,
I came to your blog through mightymoms, hope you dont mind.

Down hear in the land of oz during summer we light up the good old bbq, sit outside by the pool and have yummy bbq hamburgers or marrinated chicken with salad followed by fresh fruit and a glass of ice cold water or cordial. My kids used to love it and still do.
